石巻西学校給食センターは東松島市にある。この建物は昭和54年にできた。震災前、石巻に給食センターは5つあったが、2つ使えなくなってしまった。そこで、震災後に東松島市から借りたこの給食センターが、石巻西学校給食センターという名前になってはじまった。所長の後藤久一さんと栄養士の赤間ゆみさんにお話を聞いた。
給食センターの仕事は朝８時からはじまり、洗いものまで終わるのはだいたい午後３時半ごろ。料理を作る人、栄養を管理する人、作った料理を運ぶ人の３つの係があって、37人が働いている。1日に作る給食は4000人分。あまらないように作るそうだ。
メニューは栄養士が決める。栄養士は３人いる。栄養を考えて、おいしく食べてもらえるようにくふうしている。材料はいろんなところから来ているが、小松菜や笹かまぼこは石巻産、ねぎは東松島産。野菜、お肉、お豆腐、こんにゃく、めん類など、なるべく石巻のお店から買っている。
震災のあと、去年の４月にはパンと牛乳だけだったが、５月にはデザートやアーモンドフィッシュ、６月にはごはんもだせるようになった。元に戻ったのは今年の４月だ。
震災前に使っていた緑色のおぼんは津波で流されてしまったので、震災後は、支援でいただいたピンクのおぼんにかわった。はいしゃスプーンも支援していただいた。震災前、スプーンは給食センターで洗ってもらいたいけれど、洗う機械もこわれていまったので自分たちで洗った。
変わってよかったと思うこともある。震災前、ごはんは一人分ずつ入れものに入っていたけれど、震災のあとは大きな釜で届き、みんなで分けて食べている。津波で入れものが流されてしまったからだ。でも、このほうがおいしいとみんな言っている。
後藤所長は、残さないで食べてもらったとき、赤間さんは、おしいいと言われたとき、給食センターの仕事をしていてよかったと思うそうだ。
くじらはもうでないんですか？と赤間さんに聞いてみたら、「11月からくじらのしぐれあえがでますよ」と言われた。（やったー！！）

We love school meals.

The Ishinomaki West school meals centre is located in Higashi Matsushima city, in a building built in 1979. Before the March 2011 tsunami and earthquake disaster, there were 5 centres operating in the city of Ishinomaki, but afterwards two were unusable. As a result, after the disaster, this building in the city of Higashi Matsushima was reactivated, changing its name to the Ishinomaki West School Meals Centre run by the city of Ishinomaki. We spoke to the centre’s director, Hisaichi Goto and a nutritionist at the centre, Yumi Akama.
Work starts at the centre at 8 o’clock every morning and continues until the plates are all washed at around 3:30 in the afternoon.There are 3 roles carried out by 37 people at the centre: nutritional planning, cooking, and distribution. They make 4000 meals a day, ensuring that nothing goes to waste.
The three nutritionists decide the menu, coming up with delicious meal plans. There are various ingredients, including potherb and fishcakes available from Ishinomaki, while spring onions come from Higashi Matsushima and they try to source vegetables, meat, tofu, konyaku and noodles from local stores in Ishinomaki wherever possible.
In April 2011, soon after the earthquake, they could only get bread and milk. In May they added desserts and crackers, then rice in June. They expect to return to full menus by April this year.
The green trays everyone used were lost, swept away by the tsunami. Now, thanks to donations received after the earthquake everyone now has pink trays, and chopsticks and spoons were also donated. Before the earthquake the centre used their own dishwasher to wash spoons, but that being broken, everyone now washes their own.
There are some changes that have been for the better. Before, separate individual portions of rice with each meal were served, but now students have to help themselves from a big pot. Everyone agrees it tastes better eaten this way.
According to Mr Goto, when he sees the empty plates coming back, and according to Mrs Akama, who hears people saying how delicious the food is, those moments makes them really happy to be doing this work.
When I asked Mrs Akama “Is whale still off the menu?” She replied “from November we’ll be serving boiled whale meat in soy sauce.” (Yippee!)
